reymitchel Posted March 24, 2020 Share Posted March 24, 2020 After all the recipes I tried I prefer to cook the pork with the charcoal griddle, sure if I have a chance.But anyway I cook it not that often, I prefer meat with less fat. I've started to cook like that when I've understood that this way is more healthy.The main pain - is to choose the charcoal griddle. I smoke pork shoulders in my offset Oklahoma Joe cooker ... low and slow use combination charcoal and red or post oak ... mostly wood ... I smoke them for about 2 to 3 hours unwrapped them I wrap them up for another 4 to 6 hours depending on size. All I use to season them with is Natures Seasoning .... the wrapping holds in all the juice ... pork as good as any bbq joint you will find ... no need to inject most pork ... they are plenty flavorful on their own ...
